IMPOSSIBLE Curry Fried Rice

Ingredients

  • spray of extra virgin olive oil
  • 340 g IMPOSSIBLE minced beef
  • 1 tbsp extra virgin olive oil
  • 1 medium onion sliced
  • 2 garlic cloves minced
  • 3 cm ginger minced
  • 2-3 cili padi optional
  • 2 eggs
  • 1 red capsicum sliced
  • 200 g mushroom sliced
  • 1 carrot sliced
  • 300 g brown rice cooked
  • 3 tsp curry powder
  • 1 tbsp coconut aminos
  • 1 tbsp fresh lime juice
  • 2 limes for garnishing

Instructions

  • Set a non-stick wok on high. Once the pan is hot, spray lightly with olive oil and then toss in the IMPOSSIBLE meat. Cook for 4-5 mins and then remove the meat and then set aside.
  • Using the same pan, reduce heat to medium and then add in oil, onions, garlic, cili padi and ginger. Stir-fry for 2-3 mins and then add in the eggs. Scramble the eggs and chop them up.
  • Toss in carrots, mushroom and capsicum and then stir-fry for 2 mins.
  • Add in the rice, pour in coconut aminos, sprinkle curry powder and then continuously fold until all the rice gets mixed in.
  • Season to taste with some salt and lime juice. Garnish with a lime!
