Set a non-stick wok on high. Once the pan is hot, spray lightly with olive oil and then toss in the IMPOSSIBLE meat. Cook for 4-5 mins and then remove the meat and then set aside.
Using the same pan, reduce heat to medium and then add in oil, onions, garlic, cili padi and ginger. Stir-fry for 2-3 mins and then add in the eggs. Scramble the eggs and chop them up.
Toss in carrots, mushroom and capsicum and then stir-fry for 2 mins.
Add in the rice, pour in coconut aminos, sprinkle curry powder and then continuously fold until all the rice gets mixed in.
Season to taste with some salt and lime juice. Garnish with a lime!
