Easy Homemade Chicken Broth

Ingredients

  • 1.4 kg whole chicken rinsed and cleaned
  • 1 head garlic cut in half, horizontally
  • 2 medium carrots chunked
  • 2 stalk celery chunked
  • 2 medium onion quartered
  • 2 bay leaves fresh or dried
  • 1 1/2 tsp thyme leaves fresh or dried
  • water just enough to cover all the ingredients

Instructions

  • Place the chicken in a large pot. Add remaining ingredients, and then add enough water so the chicken is just covered.
  • Cover with lid, bring the water to a gentle simmer over medium heat. Then adjust heat so it’s simmering GENTLY with the lid on. Simmer 1.5 hours until chicken is tender and easily comes off the bone.
  • Scoop scum off surface once or twice during first 30 minutes.
  • Transfer chicken to pan. Shred meat to be used for other meals and remove carrots and celery from the broth and discard.
  • Transfer broth to a jar or container and refrigerate it or freeze it!
