3-Meal Prep in 20-Minutes: Easy Orange Fried Rice

Ingredients

Sauce

  • 1 medium orange for the juice
  • 3 tbsp natural orange marmalade
  • 1/4 cup coconut aminos
  • 1 tbsp potato starch

Orange Fried Rice

  • 300 g chicken breast cut into small pieces
  • 1 tbsp extra virgin olive oil
  • 1 tbsp garlic minced
  • 1 medium red onion chopped
  • 1 tbsp chilli paste
  • 150 g snow peas
  • 1 medium red bell pepper chopped
  • 1 medium carrot matchstick
  • 1 cup button mushrooms sliced
  • 300 g cooked brown rice

Instructions

  • In a bowl, combine all sauce ingredients and set aside.
  • Heat a non-stick skillet with oil on high. Toss in garlic, onion and chilli paste and stir-fry for 2-3 minutes until the smell rises!
  • Toss in chicken breast and stir-fry for 6-7 minutes until cooked, before adding in all the veggies.
  • Stir-fry for a few minutes until it is cooked and then add in the cooked rice. Fold them all, making sure it is coated with the rest of the ingredients.
  • Make a well in the middle of the skillet, add slowly pour in the sauce. Fold them all up together.
  • Give it a few stirs and then remove from heat!
  • Build your meals and enjoy!
