I’ve always been so intrigued with IMPOSSIBLE meats. If you’ve never heard of it, it’s basically a plant-based substitute for beef and it tastes just like beef… I’m not even kidding.
The first time I’ve ever tasted IMPOSSIBLE beef was when I had burgers at Fat Papas. It was interesting but I never really went to dive in and experiment on it, until today. So lo and behold, say hello to IMPOSSIBLE Curry Fried Rice – in just over 300 calories!
You’ll love this one. I used carrots, mushrooms and capsicum as the veggies for this meal, but feel free to use anything you like. As for the curry powder, of course I used the typical Malay curry powder but I’m pretty sure any kind of curry powder works well too!

IMPOSSIBLE Curry Fried Rice
Ingredients
- spray of extra virgin olive oil
- 340 g IMPOSSIBLE minced beef
- 1 tbsp extra virgin olive oil
- 1 medium onion sliced
- 2 garlic cloves minced
- 3 cm ginger minced
- 2-3 cili padi optional
- 2 eggs
- 1 red capsicum sliced
- 200 g mushroom sliced
- 1 carrot sliced
- 300 g brown rice cooked
- 3 tsp curry powder
- 1 tbsp coconut aminos
- 1 tbsp fresh lime juice
- 2 limes for garnishing
Instructions
- Set a non-stick wok on high. Once the pan is hot, spray lightly with olive oil and then toss in the IMPOSSIBLE meat. Cook for 4-5 mins and then remove the meat and then set aside.
- Using the same pan, reduce heat to medium and then add in oil, onions, garlic, cili padi and ginger. Stir-fry for 2-3 mins and then add in the eggs. Scramble the eggs and chop them up.
- Toss in carrots, mushroom and capsicum and then stir-fry for 2 mins.
- Add in the rice, pour in coconut aminos, sprinkle curry powder and then continuously fold until all the rice gets mixed in.
- Season to taste with some salt and lime juice. Garnish with a lime!
