Zesty Salmon Egg Fried Rice
Makes – 3 meals
Time needed – 20 mins
Here’s what you need:
- 300g salmon fillets, cut into 3cm cubes
- 1 tbsp lemon zest
- 1.5 tbsp lemon juice
- 250g baby spinach
- Cooked basmati rice according to your portions
- Extra virgin olive oil spray
- Salt and pepper to taste
Here’s how you do it:
- Heat a non-stick skillet with evoo spray.
- Toss the salmon and cook for about 3-4 mins until crispy on the outside or to desired doneness. Remove from heat.
- Add in lemon zest, lemon juice and egg yolks and mix well.
- Add in rice, stir-through until mixed well.
- Finally toss in baby spinach and salt and pepper to taste.
- Remove from heat and build your meals.
