So, I have to apologise for being MIA for 4 months. If I was pregnant, I’m probably in my final trimester. Sheesh. (But no, I’m not pregnant).

Which is why today I have a brand spanking new video meal prep style!
I call it The Welcome Back Chicken Meal Prep. Why?

It’s super easy you can do it right now and best of all you only need 6 main ingredients to make this baby under 350 calories and with about 30g of leany protein so #noexcuses.

The Welcome Back Easy Chicken Meal Prep
Serves – 3
Time needed – 15 mins
Cost – ~$3.05 per serve
Here’s what you need:
- 300g cooked brown rice
- 300g chicken breast
- 1 green capsicum
- 1 yellow capsicum
- 1 red capsicum
- 100g button mushrooms
- 2 cloves garlic
- Chilli padi
- 1 tbsp liquid aminos
- 1 tbsp Five Spices
Here’s how you do it:
- Trim and slice chicken, cut veggies and set aside all the other ingredients
- Heat oil in a non-skillet pan.
- Add in garlic and chicken and stir-fry for 3 minutes.
- Add in veggies, give it a few stirs and cook for 4 minutes covered.
- Add in chilli padi, liquid aminos and spice, give it a few final stirs.
- Separate into 3 different containers. Let it completely cool before covering and store in the fridge for up to three days.

*Keep in mind that this numbers are a rough guide. It depends on where you buy it and when. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount. I’ve also added $0.50 to the final amount for all the ~ items.
