Yo wassup guys! So it’s been a while. I know, it’s been a LOOOONGGGG WHILE. Oh my, so many things has happened since I last produced a video.

So, I have to apologise for being MIA for 4 months. If I was pregnant, I’m probably in my final trimester. Sheesh. (But no, I’m not pregnant).

I’ll let this video explain why I’ve been gone but now I am back and in Take That style, Back for Good.

Which is why today I have a brand spanking new video meal prep style!

I call it The Welcome Back Chicken Meal Prep. Why?

  • Everyone needs a break sometimes for some reason. Sometimes you even slip. This is great for those of you who have found yourself slipping off the bandwagon and then restarting on a clean slate — Welcome back, sweetheart.
  • After 4 months, I’m back — Welcome back, Aqilah

It’s super easy you can do it right now and best of all you only need 6 main ingredients to make this baby under 350 calories and with about 30g of leany protein so #noexcuses.

Let’s go!

The Welcome Back Easy Chicken Meal Prep

Serves – 3
Time needed – 15 mins
Cost – ~$3.05 per serve

Here’s what you need:

  • 300g cooked brown rice
  • 300g chicken breast
  • 1 green capsicum
  • 1 yellow capsicum
  • 1 red capsicum
  • 100g button mushrooms
  • 2 cloves garlic
  • Chilli padi
  • 1 tbsp liquid aminos
  • 1 tbsp Five Spices

Here’s how you do it:

  1. Trim and slice chicken, cut veggies and set aside all the other ingredients
  2. Heat oil in a non-skillet pan.
  3. Add in garlic and chicken and stir-fry for 3 minutes.
  4. Add in veggies, give it a few stirs and cook for 4 minutes covered.
  5. Add in chilli padi, liquid aminos and spice, give it a few final stirs.
  6. Separate into 3 different containers. Let it completely cool before covering and store in the fridge for up to three days.

How much this costs:

*Keep in mind that this numbers are a rough guide. It depends on where you buy it and when. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount. I’ve also added $0.50 to the final amount for all the ~ items.

  • 300g cooked brown rice $1.00
  • 300g chicken breast $2.75
  • 1 green capsicum
  • 1 yellow capsicum
  • 1 red capsicum $3.50 for all 3 capsicums
  • 100g button mushrooms $1.00
  • 2 cloves garlic ~
  • Chilli padi ~
  • 1 tbsp liquid aminos ~
  • 1 tbsp Five Spices ~

Total price = ~ $9.75
Price per serve = ~ $3.25
