A classic recipe made into a slider so it’s easier to bring around with you wherever you’re going!

Vietnamese Banh Mi Sliders Prep
Makes – 4 sliders
Time needed – 15 mins
Cost – ~S$2.85 per slider
Here’s what you need:
- 1 tbsp coconut oil
- 1 red onion, sliced
- 1 tbsp garlic, minced
- 300g beef slices
- 2-3 red chillies, sliced (remove seeds to make it less spicy)
- 2 tbsp fish sauce
- Juice from 1 lime
- 1 tbsp coconut sugar (brown sugar or honey as substitute is fine)
To serve:
- Multigrain country loaf
- Romaine lettuce leaves
- Cucumber, sliced thinly
- Kaffir lime leaves, sliced
- Coriander leaves, chopped
Here’s how you do it:
- Heat coconut oil on a non-stick pan on medium high heat.
- Add onion and garlic and stir-fry for 2 minutes until slightly soft.
- Increase heat to high. Add in beef slices and stir-fry for 3-4 minutes. It should be slightly cooked at this point. Add in chillies and stir through.
- Pour in fish sauce and coconut sugar. Give it a final stir for about 1 min and remove from heat.
- It’s time to build your sliders. Place one slice of bread roll and add in the banh mi mix.
- Top it up with sliced cucumber and lettuce leaves. Add in kaffir lime leaves and chopped coriander.
- Give it a squeeze of lime, top it with another slice of bread and use a chopstick to hold the slider together.
- Enjoy warm by toasting it for a minute or two or fresh as it is!

You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.
