One of the easiest go to meal preps that I constantly make because A. it’s super convenient, B. it’s super fast. Literally takes 15 minutes to build this one up!
I have to say though that I took a shortcut and used a 100% Vegetable Broth that’s made entirely out of vegetables and a touch of sea salt. If you prefer to make your own vegetable stock, by all means go for it. The original recipe also uses a Mizkan Soup Base but it contains pork of which I do not eat.
This recipe is also vegetarian but I’ve used eggs so if you do not eat eggs, feel free to take it off from your preparation! Now here’s one thing I need you to remember too… As we’re preparing this for meal prep, don’t overcook your leafy veggies! I only cooked it for 30 secs, and if you want, you can also separate the veggies from the soup before storing it. That way you retain as much nutrients in it as possible.

3-Meal Prep: 15-min Vegetarian Soba Noodle Soup
Makes – 3 meals
Time needed – 15 mins
Cost – ~$4.60 per meal
Here’s what you need:
- 3 bundles soba noodles
- 300g silken tofu
- 800ml Pacific Organic Vegetable Broth
- 150g shimeiji mushrooms
- 250g baby bok choy
- 3 eggs, hard boiled
Here’s how you do it:
- Heat up a pot of water and bring it to boil. Cook the soba noodles for about 5 minutes. Drain and soak it in ice water to stop it from cooking.
- Heat up water and bring to boil. Add the vegetarian soup base, tofu, mushroom and bok choy and boil for about 30 secs. You don’t want to overcook it especially if you’re making this as a meal prep.
- Add the cooked egg on top of the soba noodles, pour in the soup and top it up with sesame and spring onions.
How much this costs:
*Keep in mind that this numbers are a rough guide. It depends on where you buy it and when. You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.
