3-Meal Prep: Turmeric Beef with Basmati Rice

Makes – 3 meals
Time needed – 20 mins
Here’s what you need:

- 1/2 tbsp extra virgin olive oil
- 400g stir-fry beef or flank steak, sliced
- 3 small onions, sliced
- 1 tbsp minced garlic
- 2 green cili padi, sliced *optional
- 2 red chillies, sliced
- 200g long beans, cut into 2cm pieces
- 200g broccoli, cut into small pieces
To serve with basmati rice if preferred.
Here’s how you do it:

- Start by cooking the broccoli. If you’re not having this with rice, you can cook it by boiling the broccoli in a small pot of water. I cooked it by steaming the broccoli towards the end of cooking my rice. You can do this too.
- Heat a non-stick skillet on high. You don’t need to add oil at this point.
- Once the pan is hot, toss in the beef slices and sprinkle turmeric on top of it. Mix beef and turmeric up and if it’s too dry, add a touch of hot water to mix them up. Stir-fry for 3 minutes.
- Now add the onions, garlic and olive oil and stir-fry for a further 2 mins.
- Add in the chillies and long beans and mix them all up.
- Remove from heat.
- Build your meals according the macros that suits you.
