I used egg in this recipe so if you don’t eat eggs omit them. Also, chillies are important to me so if you don’t like spicy food don’t add them in! It tastes equally as great without the chilli paste.

2-Meal Prep: Vegetarian Tofu and Vegetable Stir-Fry
Makes – 2 meals
Time needed – 15 mins
Cost – ~$3.60 per meal
Here’s what you need:
- 400g tofu, cut into small cubes
- 2 whole eggs medium sized
- 150g French beans
- 1 red capsicum
- 1 yellow capsicum
- 1 tbsp chilli paste
- 1 tsp liquid aminos
- 5 cili padi, sliced
- 2 cloves garlic, minced
- 1 tbsp coconut oil
- Pepper to taste
Here’s how you do it:
- Heat non-stick skillet or wok with oil. Add in garlic and stir fry for 1 minute until golden brown. Add in cili padi and liquid aminos and mix it up.
- Add in all the veggies and stir fry for a minute or two.
- Add in tofu and carefully stir through without breaking them up. Push the ingredients to the side to make space for the egg.
- Add in the egg on the side, scramble it up and let it cook for about 30 secs before mixing it through with the other ingredients.
- Finally add in chilli paste and pepper to taste. Remove from heat and serve hot or let it cool completely before adding in to your containers!

You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.
