The Healthier Lontong Goreng
Makes – 3 meals

Cost – ~S$5.90
Here’s what you need:
- 300g lontong, cut into 2cm cubes
- 2 tbsp homemade chilli paste
- 1/2 onion, chopped
- 1 tbsp minced garlic
- 250g chicken breast, sliced
- 6 large prawns, peeled and deveined
- 1 tomato, chopped
- 1 tbsp tomato paste
- 1 tbsp oyster sauce
- 1 tbsp extra virgin olive oil
- 2 eggs
- 250g Chinese leafy veggies, halved
- 200g cabbage, chopped
- Spring onion for garnishing
Here’s how you do it:
- Prepare all ingredients and make sure you have them ready before you start.
- Heat a non-stick skillet on high and add in extra virgin olive oil.
- Once the oil is hot, add in garlic and onion and stir-fry until fragrant.
- Toss in tomato, chilli paste, tomato paste and oyster sauce and stir-fry for 2 minutes.
- Add in chicken breast and stir-fry for 4-5 minutes. Add in prawns and stir-fry until it turns slightly pink.
- Add in lontong and mix well.
- Toss in veggies and stir through and fold and let it cook for about 2 mins. Push the ingredients to the side and lightly beat egg before pouring it into the middle of the pan.
- Let the egg cook for about 1 minute and then mix well with the rest of the ingredients for a few more stirs. Remove from heat.
- If serving immediately: garnish with spring onion and serve hot.
- If keeping for meal prep: let the lontong goreng cool down, garnish with spring onions and separate into 3 containers.
