Super easy to make with tons of good low GI carbohydrates from the cooked basmati rice and protein from chicken breasts! I love this recipe. It’s spicy and it reminds me of good ‘ol Bangkok. Give it a go and let me know how you do!
3-Meal Prep – Tom Yum Fried Rice
Makes – 3 meals
Time needed – 15 mins
Cost – ~$3.40 per meal
Here’s what you need:
- 350g chicken breast, sliced
- 300g cooked basmati rice
- 1 tbsp olive oil
- 1 red onion, sliced
- 2 cloves garlic, sliced
- 2-3 cili padi, optional
- 2 stalks lemongrass, sliced at the white part only
- 4-5 kaffir lime leaves, cut using a scissors
- 200g button mushrooms, sliced
- 200g snow peas
- 1 tbsp tom yum paste
- 1 tsp fish sauce
Here’s how you do it:
- Heat a non-stick skillet on medium high with extra virgin olive oil. Toss in onions and garlic and stir-fry for 1 min.
- Add in lemongrass, cili padi and kaffir lime leaves and stir-fry till fragrant.
- Toss in chicken, and stir-fry for 2 mins before covering it for another 5 mins.
- Add in mushrooms and snow peas. Stir-fry for a further 2 mins and then add in tom yum paste. Mix well.
- Add in cooked rice, and stir it through till it mixes with the rest of the ingredients.
- Make a well in the middle of the pan and break two eggs. Let it cook for 1-2 minutes. While waiting, add in fish sauce.
- Give it a final stir and remove from heat.
- Serve hot or let it cool for one hour before dividing it into three meals.

You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.
