When I was shopping for ingredients for this recipe, I initially wanted to make just two serves to have for dinner but I overbought the broccoli so I turned it into a meal prep.

Teriyaki Beef Udon Meal Prep
Makes – 4
Time needed – 15 mins
Cost – ~$2.85
Here’s what you need:
- 300g stir fry beef strips marinated in 1/2 tbsp liquid aminos and 1/2 tbsp black rice vinegar
- 1 tbsp extra virgin olive oil
- 300g broccoli, stemmed and sliced
- 300g udon noodles, cooked
- 1 clove garlic, sliced
- Spring onions
- Sesame seed
For the sauce
- 2 tbsp liquid aminos
- 2 tbsp honey
- 2 tbsp black rice vinegar
- 1 tsp potato starch
- 1 tbsp water
Here’s how you do it:
- Mix all the ingredient for the sauce in a small bowl and set aside.
- Cut broccoli up to your preferred size, if you like ’em small, chop them up.
- Heat a non-stick skillet with oil. Add in garlic and stir-fry till fragrant.
- Add beef and stir-fry for 3-4 mins and then add in broccoli.
- Add the sauce, stir fry for a further 2 mins and finally add in cooked udon.
- Toss it for a final minute, remove from heat, serve or prepare your meals.
- Top it off with spring onion and sesame seeds.
