Tempura Prawn Meal Prep with Pasta and Veggies
Makes – 2 meals
Time needed – 20 mins
Here’s what you need:
- 10-11 prawns, peeled and deveined
- 1-2 tbsp potato starch
- 1/2 cup panko bread crumbs (or however much you want)
- 1 egg, beaten
- 2 red capsicum, sliced lengthwise
- 100g baby carrots, halved
- 2 fist sized cooked pasta (or whatever fits your macros)
Here’s how you do it:
- Begin by coating each prawn with potato starch, egg and panko bread crumbs.
- Heat a non-stick skillet with olive oil. Once the pan is hot, add in the prawns. Cook 2 mins per side or until desired. Remove from heat.
- Using the same skillet, lightly spray with evoo and toss in capsicum and baby carrots. Cook for 2-3 mins and remove from heat.
- Build your meals according to your macros, together with the pasta
