Super simple, vibrant and full of flavour favourite that you can make for meal prep or for dinner your entire family will love.
This recipe only takes less than 10 mins to cook provided you have all the ingredients ready and the measurements I’ve used can make 3-4 meals depending on your goal portions! Give it a go!
Also, egg noodles are surprisingly low in calories and super tasty – if you’re one person who loves chewy sort of carbohydrates, this might even trick your brain to thinking that you’re not even trying to eat healthy. It’s so chewy!! Come on admit it, we’re Asians. We like chewy stuff (hint: bubble tea pearl).
That said, any other kinds of noodles might work too so whatever rocks your boat.
Point to note though: One of the recipes which I actually used leftovers to make this. Literally had some egg noodles, beef and lemongrass lying around. That said, this dish can do with a little more veggies in it which I didn’t quite have any left. I suggest making it a little colourful with some red and green capsicums or snow peas. That’ll seal the deal!

3-Meal Prep: Stir Fry Thai Beef with Egg Noodles
Makes – 3 meals
Time needed – 15 mins
Cost – ~S$2.10 per serve
Here’s what you need:
- 300g cooked egg noodles
- 300g stir fry beef strips
- 1 tbsp coconut oil
- 1 tbsp chopped garlic
- 2-3 star anise
- 2-3 spring onions, chopped
- 2 lemongrass, chopped at the white part only
- 1 tbsp fish sauce
- 2-3 cili padis, chopped *optional
- A bunch of coriander leaves, roughly chopped
- Juice from 1 lime
Here’s how you do it:
- Prepare all ingredients as above and have it ready before you begin.
- Heat a non-stick skillet on medium high and add coconut oil. Once oil is hot, add star anise and stir-fry to let it infuse with the oil for about one minute. Remove star anise.
- Add in chopped garlic, cili padi, lemongrass and spring onion and stir fry for 1 minute.
- Toss in the beef and stir-fry for a further 3 minutes until beef is cooked.
- Toss in the noodles along with a few tablespoons of water to let the noodles separate from the steam. Mix everything together for about 1 minute.
- Remove from heat. Toss in fish sauce, lime juice and chopped coriander.
- If making for meal prep, let the meal cool down for a little bit before storing in containers. Enjoy!
