Snacking is important in so many ways. It raises your metabolism, helps you eat lesser during your main meals and keep you bursting with energy throughout the day. I love to experiment on snacks and today we’re skewing a little bit from our usual Asian fare and make it a little more fusion-ish.
Say hello to Prawns with Walnuts and Honey Yogurt Dip, which is great for snack prep for a few days or served as a party food!
The whole idea of this recipe is to combine the savoury taste of prawns coated in potato starch (it’s crunchy!) and the sweetness of the honey and the sourness of the yogurt dip. The end result – super yummy!
I know it’s hard to picture how it tastes like but give it a go. It’s healthy, it’s high in protein, good fats and whole carbs and definitely a kick from your usual protein shakes and apple with peanut butter.
Prawns with Walnuts and Honey Yogurt Dip
Serves – 4
Time needed – 10 mins
Cost – $3.70
Here’s what you need:
- 400g tiger prawns, peeled and deveined
- 1/4 cup potato starch
- 1 egg white
For the dip
- 3 tbsp Greek yogurt
- 1 tbsp honey
- Juice from 1 lemon
For the walnut side
- 1 tbsp honey
- 1/2 cup walnuts
Here’s how you do it:
- Coat prawns with egg whites and potato starch.
- Rinse the walnut halves with water, drain and set aside.
- Combine yogurt, honey and juice from 1 lemon in a bowl. Mix well and set aside.
- In a bowl, mix walnuts and honey and set aside.
- Heat a non-stick skillet on medium high and pan-fry shrimp. When cooked, remove from heat.
- Build your snack, and eat them by dipping the prawn with the honey walnuts and into the yogurt dip! SUPER YUMMY!
