3-Meal Prep: High Protein, Low Carb Red Curry Stir Fry

Makes – 3 meals
Time needed – 15 mins

Here’s what you need:

  • 1 tbsp extra virgin olive oil
  • 1 tbsp curshed garlic
  • 1/2 red onion, sliced
  • 3 red chillies, sliced
  • 300g chicken breast, sliced
  • 6 king prawns, peeled and deveined
  • 200g snapper fillets, cubed
  • 2 tsp fish sauce
  • 1 tbsp honey
  • 1 cup water
  • 1 cup holy basil leaves (if you don’t have this just use sweet basil)
  • 1 red capsicum, sliced

Here’s how you do it:

  1. Heat non-stick skillet with olive oil. Add in onion, garlic and chillies and stir fry until cooked through.
  2. Add in red curry paste and stir through.
  3. Add in chicken breast and cook for 6-8 mins. Stir continuously so it doesn’t burn.
  4. Toss in prawns, cook halfway and then add in snapper fillets. Stir fry till the prawns and fish are cooked.
  5. Add in fish sauce, honey and water and mix it all up.
  6. Add in basil leaves and red capsicum. Stir fry for 1-2 mins and remove from heat.
  7. Let it cool down before adding in to three containers or serve hot! Enjoy!
