3-Meal Prep: High Protein, Low Carb Red Curry Stir Fry

Makes – 3 meals
Time needed – 15 mins
Here’s what you need:

- 1 tbsp extra virgin olive oil
- 1 tbsp curshed garlic
- 1/2 red onion, sliced
- 3 red chillies, sliced
- 300g chicken breast, sliced
- 6 king prawns, peeled and deveined
- 200g snapper fillets, cubed
- 2 tsp fish sauce
- 1 tbsp honey
- 1 cup water
- 1 cup holy basil leaves (if you don’t have this just use sweet basil)
- 1 red capsicum, sliced
Here’s how you do it:

- Heat non-stick skillet with olive oil. Add in onion, garlic and chillies and stir fry until cooked through.
- Add in red curry paste and stir through.
- Add in chicken breast and cook for 6-8 mins. Stir continuously so it doesn’t burn.
- Toss in prawns, cook halfway and then add in snapper fillets. Stir fry till the prawns and fish are cooked.
- Add in fish sauce, honey and water and mix it all up.
- Add in basil leaves and red capsicum. Stir fry for 1-2 mins and remove from heat.
- Let it cool down before adding in to three containers or serve hot! Enjoy!
