Plant-Based Meal Prep: Tofu Bean Stir-Fry

Here’s what you need:
- 1 tbsp coconut oil
- 1 medium yellow zucchini, diced
- 200g kidney beans, drained and washed
- 2-3 cili padi *optional
- 1 tbsp minced garlic
- 1 tbsp oyster sauce
- 8 spring onions, cut into 1cm slices
- 10 shiitake mushrooms, roughly chopped
- 500g tau kwa, cut into 2cm cubes
Here’s how you do it:
- Heat the coconut oil on medium high on a non-stick skillet.
- Toss in zucchini and stir-fry for 1 minute. Toss in garlic, cili padi and spring onions and stir-fry for 2 minutes.
- Add in shiitake mushroom and stir-fry for another minute.
- Add in kidney beans and stir-fry for a minute or two.
- Add in tofu, gently fold and then add in oyster sauce. Gently stir through for about 2 minutes.
- Remove from heat.
- If storing for meal prep: Let it cool down completely. Add equal amount of tofu and bean stir-fry to each container.

You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank.
