Mum’s Protein & Veggie Blast
Makes – 3 meals
Time needed – 15 mins
Here’s what you need:
- 2 cloves garlic, sliced
- 2cm ginger, sliced
- 1/2 red onion, sliced
- 3-4 cili padi *optional
- 300g salmon fillets, cubed
- 6 prawns, peeled and deveined
- 1/2 cabbage, roughly chopped
- 3-4 long beans, cut into 2cm pieces
- 2 stalks broccolini, chopped
- 200g button mushrooms, sliced
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp extra virgin olive oil
Here’s how you do it:
- Heat a non-stick skillet with extra virgin olive oil on medium high.
- Once the skillet is hot, add in onion, garlic, ginger and cili padi and stir fry until fragrant.
- Toss in the salmon and prawn and stir-fry for 3-4 minutes or until the salmon and prawn turns slightly pink.
- Add in the veggies, starting with the carrots, stir-fry for 1-2 minutes, and then add in the other veggies and stir-fry for a further minute.
- Add in the oyster sauce and fish sauce and fold through. Stir-fry for another minute or two and remove from heat.
- Serve hot or let it cool before storing it for meal prep!
