Fried rice is a Singapore comfort favourite. Go to any hawker centre and it’s there. It’s also perhaps one of the easiest thing to cook, especially if you have leftover rice from the day before. I remembered that’s what my mother does to leftover rice!
Which is why, today I’m bringing comfort back, make it a little more nutritious and protein packed and for the first time on Asian Meal Prep – a vegetarian dish!
I’ve used brown rice in this recipe, and made it as close to being whole as possible.
Spicy Tofu Fried Rice
Serves – 4
Time needed – 20 mins
Cost – Approximately $3.70 per serve
Here’s what you need:
- 400g cooked brown rice, cooled
- 400g tau kwa (hard tofu)
- 2 tbsp olive oil
- 1 tbsp crushed garlic
- 4-5 cili padi (more if you want it spicier!)
- 1 cup baby corn
- 1 red capsicum
- 1 cup snow peas
- 2 tbsp rice vinegar
- 3 tbsp liquid aminos
- 1 tbsp oyster sauce
- 1 tbsp chilli paste
- 2 whole eggs
Here’s how you do it:
- Begin by chopping vegetables and set aside.
- Cut tofu in half, and then lengthwise and set aside.
- Heat a non-stick skillet with oil. Toss in garlic and cili padi. Stir fry until golden brown.
- Toss in tofu and stir fry for 2 mins. Toss in vegetables and stir fry for another 2 mins.
- Add in rice vinegar, liquid aminos, oyster sauce and chilli paste and rice. Stir fry until all the ingredients are mixed well.
- Make a well in the middle of the skillet and crack eggs. Let it cook till the white is slightly cooked and mix everything in.
- Build your meals!
