Lemon Butter Chicken with Pasta and Veggies
Makes – 4 meals
Time needed – 20 mins
Here’s what you need:
- 2 tbsp butter
- 450g chicken breast
- 2 lemon, sliced
- 300g long beans, cut into 4-5cm
- 1 tsp lemon pepper powder (optional)
- 3 fist sized wholemeal pasta (or according to your needs), cooked according to package
Here’s how you do it:
- Heat a non-stick skillet with butter.
- Cook the chicken 3-5 min per side. Remove from heat.
- Using the same skillet, cook the long beans and add in the pasta and lemon juice. Toss for 1-2 mins. Remove from heat.
- Add in the remaining butter, add in the sliced lemon and let it caramelize.
- Remove from heat and serve!
