Snack Prep: Healthy Spicy Chicken Nuggets

Gotta admit, I made these little babies earlier on in Circuit Breaker when McDonald’s in Singapore was closed – only because I had some intense Spicy Nuggets cravings lol. Funny how the brain works right, like when you can’t get something, you want it even more.

So of course, I had to do it myself, right? I was researching online on how to make chicken nuggets healthy-er without really compromising on the texture of it. In my mind, I wanted it healthy but still, I don’t mind having it coated with some breadcrumbs for the carbs.

Found a few recipes, tweaked it a little bit to make it Asian and boom got this one out. Spicy and juicy – super amazing.

Of course, you can have these as a high protein snack but I reckon it tastes as awesome when you combine it with some salad for lunch or dinner as well. Gotta love it. ALSO. My housemate had some Curry Sauce at home (not sure if you guys remembered they sold this one time a few months back), I just had to dip some of it into it!! #notsponsored ok lol. Makes – 3 meals
Time needed – 15 mins prep, 15 mins baking

Here’s what you need:

  • 500g chicken breast, cut into bite-sized pieces
  • 1 tbsp extra virgin olive oil
  • 6 tbsp breadcrumbs
  • 2 tbsp panko
  • 1 tbsp chilli powder (more if want extra spicy)
  • 1 tbsp chilli flakes
  • Olive oil spray
  • Salt and pepper to taste

Here’s how you do it:

  1. Preheat oven to 220 degree Celcius.
  2. Season chicken breast with salt and pepper.
  3. In a small bowl, combine breadcrumbs with panko, chilli powder and chilli flakes. Mix well.
  4. Line a baking tray with baking paper.
  5. Dip chicken breast into a touch of extra virgin olive oil and then coat it with the breadcrumb + chilli mixture.
  6. Place it on the baking sheet tray, spaced apart.
  7. Lightly spray the top with olive oil spray and then bake for 8-10 minutes. Turn over for another 4 mins or until cooked through.
  8. Remove from the oven once cooked, let it slightly cool down and enjoy!
