We’re about to celebrate the Lunar New Year now in Singapore and with the festivities everywhere, I’m inspired to make something that fulfils the Chinese side of me this week. Last week I made a Chinese-styled Chicken and Broccoli. This week, I’m using one of my favourite fruits – mandarin oranges – as a base of the ingredients of this recipe and make it wholesome yet nutritious, suitable for one of your main dishes for your reunion dinner!
If you’re craving for Chinese food but don’t want to feel guilty having them, try this recipe out. It’s delicious and it won’t make you feel bad at all!

Healthy Mandarin Soy Chicken Meal Prep
Serves – 4
Time needed – 20 mins
Cost – $3.00
Here’s what you need:
- 600g chicken breast
- Spray of olive oil
- 1 tbsp olive oil
- 500g baby bok choy
- 2 tbsp minced garlic
For the marinade
- 50 ml liquid aminos
- 1/4 cup black rice vinegar
- juice from 3 mandarins
- 2 tbsp sugar free orange marmalade
- 1 tbsp honey
- 1 tbsp potato starch
- 1 tbsp tabasco
Here’s how you do it:
- Mix liquid aminos, rice vinegar, juice from mandarins, orange maramalde, honey, tabasco and potato starch. Set aside.
- Trim visible fat off chicken and chop into cubes.
- Remove the lower part of bok choy stems and set aside.
- Heat a non-stick skillet on high and add the oil. Add garlic and stir-fry until aromatic and golden brown. Add the bok choy and quickly stir-fry a few times. Don’t overcook bok choy.
- Remove from heat and set aside.
- Heat a new non-stick skillet on high and spray with olive oil. Add chicken and cook until it’s 3/4 cooked.
- Pour in orange sauce and quickly stir. Reduce heat, let the sauce thicken and continue stirring.
- Remove from heat and build your meals, serving with a side of brown rice and garnish with sesame seeds and green onions.
