3-Meal Prep: Healthy Maggi Goreng Tom Yum

Here’s what you need:

- 2 packets of Koka noodles, cooked according to packet
- 1 tbsp extra virgin olive oil
- 1 large white onion, sliced
- 1 tbsp garlic, minced
- 1 inch ginger, minced
- 1 inch blue ginger, minced
- 2 lemongrass, crushed
- 2 cili padi, sliced *optional
- 2 kaffir lime leaves, tear into two
- 500g chicken breast, sliced
- 2 tbsp chilli paste
- 1 tbsp oyster sauce
- 2 tbsp tom yam paste
- 300g asian veggies, chopped
- 300g button mushrooms, sliced
- 1 carrot, sliced
Here’s how you do it:
- Heat non-stick skillet with olive oil. Add in onion, garlic, ginger, blue ginger and stir until cooked through.
- Add in chilli paste, oyster sauce and tom yam paste and stir through.
- Add in chicken breast and cook for 6-8 mins. Stir continuously so it doesn’t burn.
- Add in cili padi, lemongrass and kaffir lime leaves. Stir through.
- Add in carrot and mushrooms and cook for 1 min, before tossing in the Asian veggies. Cook for about 1 min.
- Add in cooked noodles and stir fry for 1-2 mins.
- Season with salt and pepper.
- Let it cool down before adding in to three containers or serve hot! Enjoy!
