3-Meal Prep: Ginger Beef Stir-Fry with Soba Noodles
Makes – 3 meals
Time needed – 15 mins
Cost – ~S$4.90
Here’s what you need:
- 300g flank steak, sliced thinly
- 1 tbsp extra virgin olive oil
- 5cm ginger, sliced
- 3 cili padi, sliced
- 1 medium onion, sliced
- 3-4 spring onions, sliced
- 1 medium broccoli
- 1 red capsicum, sliced
- 200g soba noodles, cooked according to instructions
For the sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp coconut sugar
- 1 tsp potato starch
- 3 tbsp water
- 1 tbsp white vinegar
- A few dashes of white pepper powder
Optional
- Extra virgin olive oil spray
Here’s how you do it:
- In a small bowl, mix all ingredients for the sauce until smooth. Set aside.
- Heat a non-stick skillet on high with olive oil. Add ginger and cili padi and stir-fry until fragrant. Toss in onion and stir-fry till it wilts.
- Toss in beef and stir-fry until cooked (or up to your desired doneness).
- Pour in sauce and fold beef mixture and sauce until sauce thickens. Add in spring onions and mix well. Remove from heat.
- In the same skillet, spray pan with extra virgin olive oil (optional) on medium high. Add broccoli and capsicum and stir-fry for 3-4 mins. If keeping for meal prep, don’t overcook the veggies! Remove from heat.
- If storing for meal prep: Let it cool down completely. Add equal amounts of soba noodles, ginger beef and veggies to each container.
