So… I happened to be down with the little flu this week so I overstocked on the oranges lol. I know, you’re supposed to be having it before you even get the flu but I’m more of a apple slash pineapple slash grape kinda person that I don’t usually eat those oranges!
So guess what I did with those extra oranges? Turn it into a meal! It’s super simple this one, plus it gives your usual fried rice a little twist and variety. I used basmati rice in this, popped in some awesome chicken breast, used some natural marmalade (please read the labels folks!) and tossed in some extra veggies…
And booooommmm! 3 super easy meal prep in 20 minutes! You’re gonna love this one if you love anything sweet and sour!

3-Meal Prep in 20-Minutes: Easy Orange Fried Rice
Ingredients
Sauce
- 1 medium orange for the juice
- 3 tbsp natural orange marmalade
- 1/4 cup coconut aminos
- 1 tbsp potato starch
Orange Fried Rice
- 300 g chicken breast cut into small pieces
- 1 tbsp extra virgin olive oil
- 1 tbsp garlic minced
- 1 medium red onion chopped
- 1 tbsp chilli paste
- 150 g snow peas
- 1 medium red bell pepper chopped
- 1 medium carrot matchstick
- 1 cup button mushrooms sliced
- 300 g cooked brown rice
Instructions
- In a bowl, combine all sauce ingredients and set aside.
- Heat a non-stick skillet with oil on high. Toss in garlic, onion and chilli paste and stir-fry for 2-3 minutes until the smell rises!
- Toss in chicken breast and stir-fry for 6-7 minutes until cooked, before adding in all the veggies.
- Stir-fry for a few minutes until it is cooked and then add in the cooked rice. Fold them all, making sure it is coated with the rest of the ingredients.
- Make a well in the middle of the skillet, add slowly pour in the sauce. Fold them all up together.
- Give it a few stirs and then remove from heat!
- Build your meals and enjoy!
