One of my go-to classic recipe, this Chunky Beef, Mushroom and Kai Lan stir-fry is what I normally prepare on my busiest week nights. The sweet and bitter taste of kai lan goes very well with the chunkiness of the beef and mushroom and it will definitely satisfy your taste buds when you feel like indulging in some Asian takeaway.
Kai Lan is also known as Chinese broccoli. It somewhat reminds me of broccolini, only a little bit fatter and bigger in size.

3-Meal Prep with 6 Ingredients — Chunky Beef, Mushroom and Kai Lan
Makes – 3 meals
Time needed – 15 mins
Cost – ~$4.60 per meal
Here’s what you need:
- 370g topside beef, lean, cut into chunks
- 300g mushrooms, halved
- 250g kai lan, separate stalk from it’s leaves, and cut it’s leaves into 2
- 1/2 red onion, sliced
- 2-3 cili padi *optional
- 1 tbsp extra virgin olive oil
- 1 tbsp oyster sauce
Here’s how you do it:
- Prepare all ingredients as mentioned above.
- Heat a non-stick skillet on medium high with extra virgin olive oil. Toss in onions and cili padi and stir-fry for 1 min.
- Toss in beef, and stir-fry for 2-3 mins. Add in mushrooms and kai lan. Stir-fry for a further 2 mins or until the kai lan leaves are slightly wilted. If you’re making this as a meal prep, don’t have to cook the veggies for too long.
- Finally add in oyster sauce. Cook for a further 1 min and remove from heat.
- Build your meals. I have this with 100g of basmati rice and it’s just oh-so-good. You can also have it on it’s own, really.

You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.
