Anyway because it’s Hari Raya, I was inspired to make some Eid inspired meals this week and next week and I’ve chosen to make one, a cookie because what’s Eid without all the Eid and Raya cookies right, and two … a very special dish that is close to home which, I will announce next week :)!
Without further adieu, let’s say hello to these baby cookies I made this week!
Chocolate Banana Bread Cookies. Growing up in Australia, I used to stuff myself insane with banana bread. You know, those things that pretends to be healthy but really it isn’t but they’re so good especially if it’s toasted and spread with melted butter oh my god.
BUT. We’re Asian Meal Prep. And I’m here to help you find alternatives to our favourites so it’s healthier and more nutritious for our body. I’m also here to give you some hope that eating healthy does not need to be BORING. And yes, once in a while, I do crave for cookies so this is the best time to have these babies right here.
Soft and chewy inside, you only need about 15 minutes to make this. I’ve adapted this recipe from Arman’s 3 Ingredient Flourless Banana Bread Cookies at The Big Man’s World. Thanks Arman!
Go on, make them. And even if it’s not Raya, you can pretty much have these as a snack anytime of the day.
Hari Raya Special: Chocolate Banana Bread Cookies
Serves – 10 (2 cookies per serve)
Time needed – 20 mins
Cost – ~$0.35 per serve
Here’s what you need:
- 3 medium very ripe bananas
- 4 tablespoon smooth natural peanut butter
- 1 cup rolled oats
- Chocolate chips
Here’s how you do it:
- Preheat the oven to 180 degrees Celcius and line a baking tray with baking or parchment paper.
- In a large mixing bowl, mix the bananas, oats and peanut butter very very well until it becomes a batter. If the batter is too thin, you may add more oats.
- Using your hands, form into balls and line them up on the tray and press each ball into a cookie shape.
- Top them up with chocolate chips and bake for 12 minutes (or until it’s slightly firm on the edges).
- Allow to cool for 5 minutes before enjoying or storing them for Hari Raya/Eid!
