Chinese Chicken Meal Prep
Makes – 2 meals
Time needed – 20 mins
Here’s what you need:
- 300g sweet potatoes, skin removed if preferred and sliced into thick slices. Boil it up and set aside.
- 300g chicken breast, fat removed and cut into slices
- 1 tbsp liquid aminos
- 1 tbsp rice vinegar
- 1 tsp potato starch
- 1 tbsp extra virgin olive oil
- 3 cili padi, sliced *optional
- 6 cloves garlic, halved
- 2cm ginger, sliced thinly
- 300g baby kailan
Here’s how you do it:
- In a small bowl, combine the liquid aminos, rice vinegar and potato starch.
- Heat a non-stick skillet with extra virgin olive oil.
- Toss in cili padi, garlic and ginger and stir fry until fragrant for about 1-2 mins.
- Toss in sliced chicken breast and let it cook for 4-5 minutes, stirring constantly.
- Add in the sauce mixture and coat chicken breast well with it. Remove from heat.
- Using the same pan, toss in baby kailan and stir fry for 2-3 mins until half wilted. Remove from heat.
- Build your meals according to your macros!
