3-Meal Prep: Crispy Chilli Beef and Broccoli Zoodles

Here’s what you need:
- 1 tbsp extra virgin olive oil
- 1.5 tbsp potato starch
- A touch of salt and pepper
- 2 tbsp crushed garlic
- 3 red chillies, sliced
- 2-3 cili padi, sliced *optional if you want to make it less spicy
- 2 medium broccoli, sliced
- 1/2 cup water
- Spring onions for garnishing
- Zucchini noodles
Sauce ingredients
- 1.5 tbsp dark soy sauce
- 2 tbsp honey
- Juice from 2 limes
Here’s how you do it:
- Combine beef, potato starch and salt and pepper and mix well.
- In a small bowl, combine all the sauce ingredients and set aside.
- Heat a non-stick skillet with olive oil on medium high heat. Once the pan is hot, add in the beef and cook for about 5-6 mins. Make sure you watch this so it doesn’t burn and only turn it around a few times in the 5-6 mins to get the crispy effect.
- Once the beef is cooked to your liking, remove from heat and set aside.
- Using the same pan, turn off the heat and toss in garlic and chillies. Stir fry for 1-2 mins.
- Toss in the broccoli and stir-fry for 1-2 mins. Add in water and the sauce and combine to mix well until the sauce bubbles.
- Add the beef back into the pan, stir it up to mix them all together and then garnish with spring onions.
- Remove from heat, build your meals with zoodles as your base and you’re done!
