3-Meal Prep: Crispy Chilli Beef and Broccoli Zoodles

Makes – 3 meals
Time needed – 15 mins

Calories 411 Protein 29g Carbs 23.4g Fats 12.8g Sat Fat 6.7g

Here’s what you need:

  • 1 tbsp extra virgin olive oil
  • 1.5 tbsp potato starch
  • A touch of salt and pepper
  • 2 tbsp crushed garlic
  • 3 red chillies, sliced
  • 2-3 cili padi, sliced *optional if you want to make it less spicy
  • 2 medium broccoli, sliced
  • 1/2 cup water
  • Spring onions for garnishing
  • Zucchini noodles

Sauce ingredients

  • 1.5 tbsp dark soy sauce
  • 2 tbsp honey
  • Juice from 2 limes

Here’s how you do it:

  1. Combine beef, potato starch and salt and pepper and mix well.
  2. In a small bowl, combine all the sauce ingredients and set aside.
  3. Heat a non-stick skillet with olive oil on medium high heat. Once the pan is hot, add in the beef and cook for about 5-6 mins. Make sure you watch this so it doesn’t burn and only turn it around a few times in the 5-6 mins to get the crispy effect.
  4. Once the beef is cooked to your liking, remove from heat and set aside.
  5. Using the same pan, turn off the heat and toss in garlic and chillies. Stir fry for 1-2 mins.
  6. Toss in the broccoli and stir-fry for 1-2 mins. Add in water and the sauce and combine to mix well until the sauce bubbles.
  7. Add the beef back into the pan, stir it up to mix them all together and then garnish with spring onions.
  8. Remove from heat, build your meals with zoodles as your base and you’re done!
  9. Enjoy!
