I’ve used snow peas, capsicum, zucchini and eggplant for this one, you can use any veggies you like. Just remember when it comes to cooking veggies, try to keep it to under 2 minutes if you’re making it for meal prep as you’ll be reheating them (and cooking them further).

The 350 Calories Anything Goes Chicken Stir Fry (Super Quick and Easy!)
Makes – 3 meals
Time needed – 20 minutes
Cost – ~$3.75 per meal
Here’s what you need:
- 600g chicken breast, excess fat removed
- 1 medium red onion, sliced
- 3 cloves garlic, sliced
- 2 red chillies, sliced
- 1 tsp sesame oil
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tbsp extra virgin olive oil
- A bunch of spring onions
- At least 4 different kinds of veggies
- 1 yellow capsicum, core removed and sliced
- 150g snow peas, ends removed
- 2 small brinjal, halved and cut into small cubes
- 1 zucchini, halved and cut into small cubes
Here’s how you do it:
- Heat non stick wok with olive oil. Once the oil is heated, add in garlic, chilli and onions and stir fry for 2 mins until fragrant.
- Add in chicken and stir fry for 6-8 minutes.
- Add in hoisin sauce, oyster sauce and sesame oil and stir fry for another 1-2 minutes.
- Add in all your veggies and stir fry well.
- Let it cool completely and build your meals or serve hot!
How much this costs:
*Keep in mind that this numbers are a rough guide. It depends on where you buy it and when. You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.
