Back to basics today with this simple, Singaporean dish – beef and kailan!
This recipe is complete with starchy carbs, non-starchy carbs, protein and fats and makes a great, tasty, comfort meal. I’ve used mini Brastagi potatoes and while some people may argue that it’s not very healthy because it’s not sweet potatoes and it has a higher GI, I’d say any kind of potatoes are a type of whole food. Which makes it nutritious and filling, with tons of vitamins and minerals.

Asian-Styled Meatballs with Potatoes and Kailan Meal Prep
Serves – 3
Time needed – 20 mins
Cost – Approximately $3.70 per serve
Here’s what you need:
- 300g beef meatballs (you can either make this yourself by rolling minced beef, or buy the ones ready made)
- 1 tbsp olive oil
- 2 tbsp crushed garlic
- 1/2 yellow onion, sliced
- 300g potatoes, cut into cubes
- 2 cups button mushrooms, sliced
- 2 cups kailan
- 2 tbsp oyster sauce
Here’s how you do it:
- Cut potatoes into cubes, and boil them until it cooks.
- On a non-stick skillet, heat olive oil, add in garlic and onions. Toss in meatballs and cook for about 5 mins.
- Add in kailan and mushrooms and stir fry for 2-3 mins.
- Toss in cooked potatoes. Add in oyster sauce and sesame oil.
- Build your meals. Garnish with chopped spring onions!
