Super Simple Beef Fried Rice

When you don’t feel like making anything too fancy pants, this is a quick go-to meal. You do need cooked basmati rice before hand though so one trick that I always do – make this when you have leftover rice.

Super Simple Beef Fried Rice

Makes – 3 meals
Time needed – 15 minutes
Cost – ~$3.00 per serve

Here’s what you need:

  • 300g stir fry beef strips
  • 300g cooked basmati rice
  • 2 cloves garlic, chopped
  • 1 medium onion, sliced
  • 3-4 cili padi, sliced
  • 1 tbsp liquid aminos
  • 1 tbsp chilli paste
  • 100g spring onions, sliced and chopped
  • 300g chye sim, stalked separated and roughly chopped
  • 200g button mushrooms, sliced
  • 1 tbsp extra virgin olive oil
  • 2 whole eggs
  • Garnish: sesame seeds and spring onions

Here’s how you do it:

  1. Heat non stick skillet with olive oil. Once heated, add onions, garlic and cili padi. Stir-fry till fragrant.
  2. Add beef strips and stir-fry for 3-4 minutes. Add rice and combine with the ingredients. Mix well.
  3. Add chye sim and mushrooms and stir-fry for 1 minute. Add liquid aminos, chilli paste and spring onions. Mix well.
  4. Make a well in the middle of the pan and add in two whole eggs. Let the egg cook for 1 minute before mixing them with the rest of the ingredients.
  5. Stir-fry for 30-secs and remove from heat. Build your meals and garnish with spring onions and sesame seeds.

How much this costs:

*Keep in mind that this numbers are a rough guide. It depends on where you buy it and when. You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.

  • 300g stir fry beef strips $4.00
  • 2 cloves garlic, chopped ~
  • 1 medium onion, sliced $0.20
  • 3-4 cili padi, sliced ~
  • 1 tbsp liquid aminos $0.20
  • 1 tbsp chilli paste $0.20
  • 100g spring onions, sliced and chopped $0.70
  • 300g chye sim, stalked separated and roughly chopped $1.10
  • 200g button mushrooms, sliced $2.00
  • 1 tbsp extra virgin olive oil $0.20
  • 2 whole eggs $0.40

Total price = ~$9.00
Price per serve = ~ $3.00
