3-Meal Prep: Bee Hoon Tom Yam
Makes – 3 meals
Time needed – 20 mins
Here’s what you need:
- 1 tbsp extra virgin olive oil
- 4-5 small red onions, sliced
- 1 tbsp minced garlic
- 300g chicken breast, sliced
- 1 lemongrass, sliced thinly at the white part
- 1 tbsp tom yam paste
- 200ml water
- 1/2 pack brown rice bee hoon, prepared according to instructions
- 2 medium carrots, sliced
- A handful of beansprouts
- 2 packs of Chinese leafy veggies, sliced
- 1 tau kwa, cut in cubes
- Juice from 2 small limes
- Garnishing: lime wedges
Here’s how you do it:
- Heat a non-stick skillet with extra virgin olive oil on medium high.
- Once the skillet is hot, add in onion and garlic and stir fry until fragrant.
- Toss in the chicken stir-fry for 3-4 minutes. Add in lemongrass, continue stir-frying for 2 more mins and then remove from heat.
- Using the same skillet, add in the tom yam paste and water. Mix it up and let it boil.
- Once the mix is boiling, add in the noodles. Mix it up with the water+paste mix.
- Add in the veggies, starting with the carrots and beansprouts, stir-fry for 1-2 minutes, and then add in the green leafy veggies and stir-fry for a further minute.
- Pour in lime juice and remove from heat.
- Serve hot or let it cool before storing it for meal prep!
- Garnish with lime wedges!
