5 Ingredients Chicken and Veggies Stir-Fry

My life is complete. I finally found something that is so easy it doesn’t only help my clients who find it a struggle to eat veggies, but me too on my busiest nights when the thought of cooking is far from everything else.

So I was shopping on Redmart.com, Singapore’s online grocery store and found a keeper — Modern Mum Ready to Cook veggies. When I first saw it, I was a little skeptical because I have tried probably far too many pre-cut veggies, frozen and fresh and they’re usually not as fresh as if you cut and wash them yourself. But I was pleasantly surprised when this turned out to be way beyond my expectations. Life saver really. Took me literally 10 minutes to make this 3 meals (including the cubing of the chicken breasts).

Please give it a go. Of course, you don’t have to get the pre-cut veggies and you can sub the veggies with anything you like. But this is quick, simple and tasty, you’d think twice eating out or making Mi Maggi even when you’re lazy.

5 Ingredients Chicken and Veggies Stir-Fry

Makes – 3 meals
Time needed – 10 minutes
Cost – ~$3.70 per serve

Here’s what you need:

  • 300g chicken breast fillets, skinned and cubed
  • 3 cili padi
  • 1 tbsp oyster sauce
  • One pack Modern Mum Pre Cut and Washed Broccoli and Carrots
  • 3-sec olive oil spray

To serve with

  • 300g basmati rice

Here’s how you do it:

  1. Heat non-stick skillet with olive oil spray. Add in chicken and stir-fry for 5-6 minutes.
  2. Add in cili padi and mix in with the chicken. Add in oyster sauce. Give it a stir.
  3. Add in the veggies. Give it a final stir for about 1 minute. Remove from heat.
  4. Serve with basmati rice or build your meal preps!

How much this costs:

*Keep in mind that this numbers are a rough guide. It depends on where you buy it and when. You can definitely save more money if you purchase in wet markets etc. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.

  • 300g chicken breast fillets, skinned and cubed – $2.95
  • 3 cili padi – $0.10
  • 1 tbsp oyster sauce – $0.20
  • One pack Modern Mum Pre Cut and Washed Broccoli and Carrots – $4.45
  • 3-sec olive oil spray – $0.20

To serve with

  • 300g basmati rice – $1.50

Total price = ~$9.40
Price per serve = ~ $3.15
