4-Meal Prep: Honey Lime Chicken with Rice and Kai Lan

One more for your collection of recipes? I love this one. It feels like margarita on chicken. Literally.

I’ve made a full meal out of this one instead of just the chicken, I’ve included the stir-fry veggie on the side. Kai Lan, or Chinese broccoli is one of my staples. I love the bittersweetness of the veggies and it goes extremely well with oyster sauce.

4-meal Prep: Honey Lime Chicken with Rice and Kai Lan

Time needed – 30 mins
Cost – ~$2.40 for 4 serves

Here’s what you need:

  • 400-500g chicken โ€” I had a mix of breast meat and drumlets
  • 1 tbsp liquid aminos (soy substitute)
  • 1 tbsp honey
  • 1 tbsp minced garlic
  • Juice from 2 limes
  • 1 cup uncooked basmati rice
  • 250g kai lan, halved
  • 1 tbsp oyster sauce
  • 1 tbsp extra virgin olive oil

Here’s how you do it:

  1. Begin by cooking your rice. 1 cup of basmati rice to 2 cups of water. This will yield enough for 400g of rice later on when you separate your meals.
  2. In a bowl, marinate chicken with honey, garlic, liquid aminos and lime juice.
  3. Heat oven to 200 degrees Celcius. On a baking tray, line aluminium foil and marinated chicken. Cover chicken with aluminium foil so it does not burn while baking.
  4. Bake for 20-25 mins. Remove from heat.
  5. On a non-stick skillet, heat olive oil and add 1 tsp garlic. Stir-fry and add in kai lan and oyster sauce.
  6. Stir fry for 2-3 mins.
  7. Build your meals โ€” I’ve added 100g of rice, about 100g of chicken and equally divide the kai lan! Enjoy!

*Keep in mind that this numbers are a rough guide. It depends on where you buy it and when. At the end of the day it’s possible to eat healthy without breaking the bank. Also, ~ denotes the items that should already be in your pantry for a long time or it’s a very small amount.

  • 250g kai lan, halved – $1.60
  • 1 tbsp oyster sauce – $0.20
  • 1 tbsp extra virgin olive oil – $0.20

Total price = ~$9.65
Price per serve = ~ $2.40
